Pasture Update

July  2026

Just Three More Weeks

How is your summer going?

Have you taken some time off yet to get away with the family? Do something special like celebrating our 250 th anniversary as a country.  The short historic clips were sobering as we reflected on the sacrifices of men and women that proceeded us..  Of course, every one loved the fire works and light show. Or maybe take a plunge into a cool lake or river!  Wow!  How refreshing!

We hope you have been able to do some if not all the fun things this summer.

Summer Fresh Chicken!

Summer is also the time when most of the Northeast grows it's food supply for the year. It can be a lot of work, but we are trying to do the heavy lifting for you and make it a little easier to provide quality locally grown protein.  In just three more weeks the broiler chicken will be be ready for processing and pick up on the farm between 2-7 PM on July 29. (Note the change from previous schedules)

The geese couple (see pic below) have faithfully watched over the flock, day and night for the last 10 weeks. Not one bird was lost to predators this year, so far.

Again in an effort to make it a bit easier but still reasonable we offer two options.

  • Whole birds packaged ready for roasting, freezing, or you can cut them up. The whole birds are $6.50 per lb. Most birds will average 5-6lbs dress.

  • Parted birds are cut up into breasts, "quarter leg" (drum & thigh) and wings and then placed together into a compact package that can easily be prepared for immediate dinning or freezing.   The parted birds are $7 per lb.

The white breasts are lean, perfect for roasting or frying, while the dark meat  in the quarter leg of the chicken (drum & thigh) is juice and tender which is great for grilling and baking.

We still have unclaimed birds, so send in your order this week, with the number of birds you would like, preferred style (whole or parted) and a deposit of $50 to hold the order in your name.  If for some reason you are not able to pick up your order on   Wednesday afternoon July 29 then we may be able to freeze and hold your order for a later pickup. Please check with us in advance to make sure we have enough freezer space.

So to order, email us at twinbrook1902@gmail.com with your order details and we will get back to you with a confirmation note.  A lot of people are using venmo for deposits: @twin-brook.  Cash and checks are also fine.

News and Views on Regenerative AG

Industry experts are inticapting the end of the nearly 10 year beef cattle price escalation.  They do not point to any significant increase in over all beef cattle population, but they note a slight uptick in consumer experimentation with other protein sources.   The presumption by some experts is that the current cattle bubble cannot survive  another year.  They note that historically the cattle market cycles normally average about seven years and therefore we are long overdue for a correction. I hope they are right!

Another important factor that hardly any of the "experts" are addressing is the heavy government subsidies  for corn and soy bean growers.  These farmers keep pressuring the government for more and more help in lowering costs, finding new markets,  which are largely overseas.  This is resulting in more and more American crop land growing product for export while the government wants to important more meat for the local market.  You can probably see as I do how dumb and expensive the American food system is becoming.   What if the row crop growers stopped expanding and and started adding a few head of cattle, to be market locally?   It would be a good start in helping them  diversify their product line which is a good thing, but would also mean American farmers could start growing food again for Americans.  Sounds a lot like "America First". What a novel idea.   This is probably a bit  bewildering for those that thought that's what farmers were doing all along.

So what does this all mean for you?

It means that your regenerative farmer in Camillus has a limited supply of beef available for the Fall harvest this year.  We normally buy-in  10 or 11 head of younger feeders in the Spring and then finish them by Fall.  This year, because of a huge hike in feeder stock prices we could only buy in 7 head, which have already been reserved by customers.  We have never been sold out this early in the season.   Cattle prices are seemingly trying to keep up with the new pickup truck prices making both untouchable. Note: Our farm store will be restocked with retail beef cuts around July 27.

So, please be patient. In the meantime we will be consulting our regenerative network in the area with the view  of procuring more cattle which we will  make  available to you when they are ready.

Enjoy the Summer!
